Dornoch Distillery is Scotland's smallest legal distillery — a tiny operation in the old Dornoch Castle Hotel fire station run by brothers Simon and Phil Thompson. What they lack in scale they more than compensate with obsessive quality: heritage barley varieties, open-top wooden washbacks, direct-fired stills, and old-fashioned production that produces a rich, complex spirit the big boys struggle to match. The whisky bar at the Castle Hotel has one of Scotland's great whisky collections.

Character & reputation
Reckoned to be the smallest whisky distillery in Scotland — around 12,000 litres a year — squeezed into the former fire station of the Dornoch Castle Hotel by brothers Phil and Simon Thompson. It's a near-total throwback: heritage barley varieties like Plumage Archer, brewer's yeast, long fermentations and old-style production aimed at recreating pre-industrial whisky. Demand wildly outstrips supply, so official bottlings are sold by ballot and vanish instantly (the Thompson Brothers indie label is the easier way in). For most visitors the real draw is the Castle Hotel bar itself, which holds one of Scotland's great whisky collections. Best for serious enthusiasts and anyone staying in Sutherland.

Dornoch is a beautiful small town with the historic Dornoch Castle Hotel, a Carnegie Club golf hotel, and a handful of good B&Bs.
