Produced at Edinburgh's Port of Leith Distillery — Scotland's first vertical distillery. Lind & Lime takes its name from the linden trees that once lined Leith's commercial streets and the limes carried on ships docked at the port. Lind & Lime is one of the best new Scottish gins of the 2020s — a deliberately tight six-botanical recipe with a pink peppercorn signature that you can taste in the glass. The Port of Leith Distillery's vertical setup is a genuinely novel piece of brewing kit. £30-36 is a fair price for a properly distinctive gin. Combine with a Leith walking weekend for an Edinburgh experience the tourists miss.
